This is an unpeated single malt from Cooley Distillery in Ireland. It was founded at a time when almost all Irish whiskeys were produced by the Irish Distillers Limited (IDL) empire. Cooley Distillery was one of the few independent Irish distilleries free from IDL’s stranglehold.
Tasting Notes:
Aroma: Sweet and clean with confectionery notes of strawberry Laffy Taffy, bubblegum, toasted marshmallows, pineapple and cherry candy – very nostalgic, warping you back to some memories of youth. More tart notes show up later, German Riesling, green grape juice, Greek yogurt. Very approachable, gentle and yet you wouldn’t miss any note. Great opener.
Taste: The oomph appears more apparently here – light pepperiness and heat. A rich and syrupy continuation of the confectionary notes – icing sugar, cereal milk, vanilla pods, sweet grain and dollops of whipping cream. Gentle grass jelly and Aiyu jelly grassiness here. A slight edge of bitterness from white pomelo rinds rounds it out.
Finish: Medium length, waves of warmth, with mild bittersweet oak to cut through the initial sweetness. Fading notes of whipping cream.
